Yield: approximately 35 squares
Ingredients
* 6 potatoes, peeled and sliced very thin
* 1/4 cup olive oil
* 1 large onion diced or 1/2 bag frozen, chopped
* 4 cloves garlic, minced
* 1 red pepper, sliced into strips
* 1 green pepper, sliced into strips
* 1 teaspoon dried rosemary
* 18-20 eggs
* 1 1/2 containers cottage cheese
* 1/4 cup grated Parmesan cheese (optional)
preparation
1. Boil potato slices in water until almost done and drain.
2. In saucepan, saute onion and garlic in olive oil till soft and a bit browned.
3. Add peppers, then saute another 10 minutes or so until soft.
4. Add drained potatoes and rosemary and mix well. Remove from heat.
5. In large bowl mix eggs well and blend in cottage cheese.
6. Stir in cooked vegetables.
7. Pour into greased 9 x 13- inch pan.
8. Bake in preheated 350 degrees Fahrenheit oven for 40-60 minutes or till center is done.
9. If using Parmesan, sprinkle over top of fritatta, run under broiler for a minute or so.
10. Cut into 35 or so squares.
