
Ingredients
pony-tail radish(medium)15 pieces, young green onion 100g, garlic 30g, ginger 15g, salted anchovies 3 Tsp,
powdered red pepper 5 Tsp,rough salt 2/3 cup, sugar some, powdered sesame with salt some


Salt down radish
a. Peel down radishes, nip off except young leaves, and wash them.
b. In case of too big radishes, cut them into four.
c. Spread some salt and leave them still for 2 hours.
d. Rinse and dry them.
Aarrange ingredients
salted anchovies : boil them with some water and leave the juice cool.
green onion : dry trimmed ones and cut them as long as 3cm.
garlic, ginger : chop washed ones into very little pieces.
Fix kimchi
a. Mix salted radishes with some powdered red pepper until peppery red color is set.
b. Mingle with prepared salted anchovies, young green onion, garlic, and ginger.
c. Season them with salt and sugar.
d. Keep them in a container for 3~4 days at 10?.
*If anchovies are not boiled, it turns black. Salted shrimps could replace
salted anchovies or we can keep kimchi delicious even without them.
