United Airlines Carrot Cake

Ingrediants
 
1 1/2 cups corn oil
2 cups granulated sugar
3 eggs
1 1/2 cups grated carrot
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon vanilla extract
1 tablespoon cornstarch
3/4 cup chopped walnuts
 
Preparation
 
Preheat oven to 350 degrees F. Line a 13 x 9-inch baking pan with wax paper.

Mix all ingredients just until well blended. Pour batter into prepared pan. Bake for 50 minutes. Cool. Ice with Cream Cheese Icing.

Cream Cheese Icing
6 ounces butter
8 ounces cream cheese
2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1 teaspoon lemon juice

Cream butter and cream cheese. Beat in remaining ingredients until fluffy.
