1 whole sweet potatoes (8 ounces)
8 whole white potatoes -- thinly sliced
1 whole onion -- thinly sliced
1/4 cup olive oil -- saut?
1 cup cream
4 eggs
1 cup aged Swiss cheese -- shredded
Preparation
Thinly slice 8 ounces of sweet potatoes, 8 white potatoes and 1 onion. Saut? in olive oil until golden brown, layer in a greased half-sheet pan.
Beat cream with eggs; stir in shredded aged Swiss cheese, pour over potatoes. Bake in a 350?F oven for 30-40 minutes, until firm.
